Ingredients
2 tbsp Garam masala
½ tsp cumin
½ tsp turmeric
½ tsp paprika
¼ tsp cayenne
½ tsp salt
1 yellow onion, diced
3 cloves garlic, minced
½ tbsp ginger, grated
2 tbsp olive oil
12 oz cauliflower
15 oz canned chickpeas, drained
15 oz tomato sauce
¼ cup water
1/3 cup heavy cream
Salt & Pepper to taste
Directions
- Combine spices in bowl and set aside.
- In a skillet, add olive oil, onion, ginger, and garlic. Saute over medium heat until onions are soft and translucent. Then, add spices and cook for an additional minute.
- Add cauliflower florets to the skillet and sauté for about five minutes until cauliflower is coated.
- Add chickpeas, tomato sauce, and water. Simmer on medium low heat stirring occasionally for about fifteen minutes. If mixture becomes too dry add more water.
- After the sauce has simmered for about fifteen minutes, turn off the heat and stir in the heavy cream. Taste and add salt and pepper as needed.
- Serve with naan bread or over rice.
