Ingredients

2 tbsp Garam masala
½ tsp cumin
½ tsp turmeric
½ tsp paprika
¼ tsp cayenne
½ tsp salt
1 yellow onion, diced
3 cloves garlic, minced
½ tbsp ginger, grated
2 tbsp olive oil
12 oz cauliflower
15 oz canned chickpeas, drained
15 oz tomato sauce
¼ cup water
1/3 cup heavy cream
Salt & Pepper to taste

Directions

  1. Combine spices in bowl and set aside.
  2. In a skillet, add olive oil, onion, ginger, and garlic. Saute over medium heat until onions are soft and translucent. Then, add spices and cook for an additional minute.
  3. Add cauliflower florets to the skillet and sauté for about five minutes until cauliflower is coated.
  4. Add chickpeas, tomato sauce, and water. Simmer on medium low heat stirring occasionally for about fifteen minutes. If mixture becomes too dry add more water.
  5. After the sauce has simmered for about fifteen minutes, turn off the heat and stir in the heavy cream. Taste and add salt and pepper as needed.
  6. Serve with naan bread or over rice.
