Citrus Quinoa Avocado Salad

Ingredients
SALAD
½ cup diced cucumber
1 cup cherry tomatoes, cut in half
2 cloves minced garlic
¼ cup chopped red onion
1 bunch chopped cilantro
2 cups thinly sliced spinach
1 15.5 oz can no salt added garbanzo beans (drained and rinsed)
1 cup cooked and cooled quinoa
2 medium diced avocados
DRESSING
Juice of 2 lemons
Zest of 1 lemon
2 tsp Dijon mustard
1 tbsp olive oil
1 tsp honey
½ tsp ground cumin Salt and pepper, to taste Dash of cayenne pepper (optional)
Directions
- Place all salad ingredients in a bowl.
- Whisk all dressing ingredients together in a separate bowl.
- Drizzle dressing over the salad mixture and gently toss the ingredients until the dressing is incorporated throughout.
