Berry Spinach Salad

Ingredients

POPPY SEED DRESSING
¾ cup mayonnaise
1/3 cup sugar
2 tbls apple cider vinegar
2 tbls poppy seeds

PICKLED ONIONS
1 large thinly sliced red onion
¾ cup apple cider vinegar
¼ cup water
1 tsp sea salt
2 tbls sugar or honey

SALAD
6 cups baby spinach
1 cup halved strawberries
½ cup raspberries
½ cup blueberries
1/3 cup crumbled goat cheese
¼ cup chopped pecans

 

Directions

  1. To make your dressing, whisk the items listed under
    “Poppy Seed Dressing.” Refrigerate until served.
  2. To make homemade pickled onions, stir together in a small saucepan vinegar, water, salt and sugar or honey until simmering. While heating, in a jar add your thinly-sliced red onion. Then pour the mixture over onion, make sure the whole thing is coated. Let cool, then add lid and place in fridge; store up to 2 weeks.
  3. Mix together all the ingredients listed under salad, drizzle with your homemade Poppy Seed Dressing and top with pickled onions.
